Sweets for Your Sweetheart

What better excuse to indulge than Valentine’s Day? No meal on February 14th is complete without a sweet treat to top it off. Here are some easy, creative desserts to make for your loved ones this week.

Red Velvet Milkshake. It’s the no-fuss alternative to a red velvet cake. It just takes four ingredients: vanilla ice cream, red velvet cake mix, vanilla extract and milk. If you want more of a chocolaty flavor, use chocolate ice cream instead and add red food dye to keep the red hue intact.
Champagne Parfaits: Give parfaits an upgrade when you layer your favorite desserts in champagne glasses. Choose from treats like pudding, ice cream, mousse, whipped cream, strawberries, chocolate sprinkles and cookie crumbs.
Brownie Sundaes. Whip up your favorite brownie recipe. Once they’ve cooled, cut them into hearts with a cookie cutter. Serve each heart with a scoop of your favorite ice cream and strawberry or raspberry sauce.
Conversation Cookies. Make your favorite sugar cookie dough, cut into hearts, and bake. Divide frosting into six equal batches and dye pastel shades of pink, orange, yellow, green, purple and white. Frost cookies and then use a thin-tipped red icing to write on popular conversation heart sayings like BE MINE or HOT STUFF. For a simpler alternative, skip the frosting and dye the dough pastel shades before baking.
Chocolate Fondue. Simple and decadent all at once. Combine chocolate with heavy whipping cream and a little liqueur or finely chopped nuts if you feel so inclined. Our favorite dippers are strawberries, bananas, pretzels, cheesecake, pound cake and donut holes.
Jell-O Hearts. Here’s a great dessert for the kids. Make a batch of strawberry Jell-O in a 9 x 13 pan. When firm, cut into hearts and place them back into the 9 x 13 pan, spaced evenly. Pour a mixture of gelatin, sweetened condensed milk, and water over the hearts and refrigerate. Cut into squares and serve.

One last tip: Infuse hot cocoa with a little extra love when you cut marshmallows into hearts and float them on top.

Here are a few “details” you might want to consider if your wardrobe is suffering from the winter doldrums. Add a little life, color and pizzazz with these:

Statement Sunglasses: Sunglasses were heading down spring runways in all shapes, sizes and colors. There’s no sense paying a fortune for a pair of statement sunglasses, especially if you’re one to misplace your shades quite easily. Snacks to Kick Off Super Bowl

Are you ready for some football?

Even if you’re not a sports fan, this Sunday’s game is an opportunity for you to score big points with friends and family when you whip up some fun and creative game day fare.

Here are some of our favorite snack ideas for the Big Game.

Mini Corn Dog Muffins: Super easy. Just whip up your favorite corn bread muffin mix (or use a boxed one), fill mini muffin tins, and place a chunk of hot dog in the middle (one weiner can be sliced into 5 or 6 pieces). Bake as usual and serve with chilled ketchup.

Layered Nachos: Here’s the best way to make sure every tortilla chips gets a little love—use a large casserole dish and layer your nachos. Start with the chips, then add your choice of beans, meat and cheese. Repeat that layer. And again. Create as many layers as desired (and be liberal with shredded cheese, it tends to “cook away” when you bake the nachos). Bake your nachos in a 400-degree over for about 20 minutes and serve hot along with a selection of cold toppings including olives, jalapenos, sour cream, guacamole, tomatoes and salsa.

Sweet and Sour Meatballs: Got a busy weekend? This is a crowd-pleaser and super quick to put together. Use a bag of frozen meatballs and place them in a slow cooker with 9 oz. of grape jelly and a 12-oz. bottle of chili sauce. Let them cook on low all day in the sauce and by game time they’ll be ready to much on.

Football Pepperoni Pizza: Make a cheese pizza as you normally would—you can even use your favorite frozen variety. Top with pepperoni slices, overlapping them slightly and creating the shape of a football in the middle of the pie. Form the football laces on your “pepperoni football” with mozzarella sticks. Bake according to directions.

and for fans with a sweet tooth:

Super Bowl Snickers Popcorn

4 quarts popcorn (about 1 cup kernels)
1 cup salted peanuts
1 cup salted butter
2 cups light brown sugar, packed
1 tsp salt
1/2 cup light corn syrup
1 tsp baking soda
30 fun size Snickers bars, chopped
3 oz melted chocolate chips

Preheat oven to 200 degrees.
Pop your popcorn and mix it with peanuts in a big brown paper grocery bag.
Over medium heat, lightly boil butter, brown sugar, salt and corn syrup for 5 minutes (stirring constantly). Remove from heat and stir in baking soda. Pour over popcorn in the brown paper bag, roll closed and shake well. After the popcorn is coated, spread onto a cookie sheet. Top with chopped Snickers and put in oven for 5 minutes. Remove from oven and drizzle melted chocolate over top of popcorn. Let cool.

Tips for Organizing Your Fridge and Pantry

There’s nothing worse than spending money on food and then pitching it into the trash because it got lost somewhere on the shelves or your refrigerator or pantry. It’s like throwing away your cold hard cash.

Here are some tips for organizing your kitchen in an effort to cut down on waste and neglected purchases.

Especially if your grocery shopping tends to be sporadic, clearly mark on the package when you purchased an item and when you opened it. Knowing these dates can help you to use food before it spoils. Blue painter’s tape and a Sharpie are perfect for this, especially when you’re packaging up leftovers. Too many people throw out food simply because they can’t remember dates.
Refrigerate and freeze foods at their proper temperatures. Your refrigerator should be around 36ºF, unless you regularly store fish and seafood, and then it should be a couple degrees cooler (in the 32ºF to 34ºF range). Typically the front of the refrigerator is warmer than the back, so store produce at the front of your shelves and meat, poultry and fish at the back of your shelves.
When putting items away, arrange the items so the oldest items are at the front of your pantry shelves and the newer items are at the back.
If you have kids who help with groceries, clearly label shelves (canned goods, baking items, crackers/snacks, etc.) so that it is obvious where items belong—this will help maintain order in your pantry. You can use a label maker or adhesive shelf label holders for this task.
If possible, adjust shelf heights to accommodate your goods in both your fridge and your pantry. It’s amazing how much you can increase your storage capacity if your shelves are at the right heights for what you purchase.
Have some tall shelves? Store a step stool in your pantry or nearby so getting to your food is easy.
Keep shelves clean and immediately deal with any spills to ward off pests. Ants in your pantry could mean throwing out more perfectly good food.
At least once a week, do an informal review of your refrigerator, freezer and pantry—shouldn’t take more than 10 minutes or so. Get rid of spoiled and expired foods, keep a running list of items are running low and clean up any spills. Maintaining cleanliness and order is the best way to keep your food storage area organized.

One more quick tip: Line your pantry shelves with contact paper and your refrigerator shelves with a press ‘n seal wrap. Contact paper is easier to clean, and a press ‘n seal wrap can simply be lifted up and discarded when it gets dirty.
